With eight eggs and just a couple tablespoons of mayonnaise, Neiman Marcus’ Egg Salad is light on the mayo. And, similar to Neiman Marcus Tuna-Pecan Salad and Neiman Marcus Chicken Salad, there’s just a handful of ingredients. All three are easy enough to make and taste great too. Depending on the number of people in your household, you are likely to have some nice leftovers. Makes 4 cups.
Neiman Marcus Egg Salad
8 large eggs
2 tablespoons mayonnaise
1 teaspoon brown mustard
1/4 cup minced celery
Place the eggs in a small saucepan and cover with cold water. Place the pan over medium heat and bring it to a boil. Turn off the heat and let the eggs cool for about an hour or until you can remove the eggs and peel the shells with your fingers.
Dice the peeled eggs and place in a small mixing bowl. Add the mayonnaise, mustard, and celery and mix together. Season to taste with salt and pepper. Cover the mixing bowl with plastic wrap and let chill in the refrigerator for at least one hour before serving.
