Coffee Cake

Yesterday, I had the pleasure of cooking with one of our neighbors.  Emily joined me in the kitchen and we made a Sweet Family favorite recipe, one that’s been served for years.  It’s tried and true and brings back wonderful memories for Scott and his family of origin.  The recipe comes from Betty Crocker and because we wanted to make the original recipe for his parents, we used shortening.  You can use a shortening substitute such as butter if you like.  The recipe serves 9.

Coffee Cake

3/4 cup sugar

1/4 cup soft shortening

1 egg

1/2 cup milk

1 1/2 cups sifted flour

1 teaspoon baking powder

1/2 teaspoon salt

Mix together thoroughly the sugar, shortening and egg.  Stir in milk.  Sift together and stir in the flour, baking powder, salt.

Spread batter in greased and floured 9″ square pan.  Sprinkle with desired topping (see below).

Topping:

Mix together the following ingredients:

1/2 cup brown sugar

2 tablespoons flour

2 teaspoons cinnamon

1 tablespoon butter, melted

1/2 cup chopped nuts (we used pecans)

Bake at 375 degrees for 25 minutes, until wooden pick thrust into center of the cake comes out clean.  Serve warm, fresh from the oven and with butter if you like.
