This recipe dates back to high school and was given to me by a friend. I made Chewy Bars the other day to take to my brother and he loved them. They bring sweet memories, and continue to be enjoyed by family and friends. My husband and in-laws also gave them a thumbs-up. Give them a try, they are super easy and freeze well.
Chewy Bars
1/2 cup sugar
1/2 cup light Karo syrup
1 teaspoon vanilla
3/4 cup peanut butter
3 cups Special K (or similar cereal)
6 oz. chocolate chips
6 oz. butterscotch chips
Combine sugar, Karo syrup and vanilla in a pot and bring to a boil. Remove from heat. Add peanut butter and Special K. Press into a buttered (I greased with coconut oil) 9″x13″ pan. Melt chocolate chips and butterscotch chips together and spread over bars. Refrigerate.
