I love a good caesar salad and Tiger’s is one that is a crowd pleaser. We served it last night for friends and let me just say it was gone…and enjoyed by all. Friends asked for seconds.
Tiger’s Caesar Dressing
5-6 garlic cubes, minced
1 can flat anchovies
1/2 teaspoon salt
3/4 teaspoon dry mustard
pepper to taste, freshly ground
juice of one lemon
4-5 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/2 – 3/4 cup extra virgin olive oil
In a food processor, mix anchovies with garlic. Add salt, pepper, mustard, lemon juice, vinegar, and Worcestershire sauce. Lightly whisk or pulse in olive oil.
Large head of romaine lettuce
Croutons (I used parmesan crisps instead)
Shredded or shaved parmesan (I love the shaved version)
Place washed and torn romaine leaves in salad bowl and add dressing to taste. Add parmesan and croutons and toss again lightly. Toss right before serving.
